Utah woman beat her shelter roommate to death with can of Ensure

SALT LAKE CITY (TCN) — A 62-year-old woman has been sentenced after pleading guilty with a mental condition to murder in connection with the fatal beating of another woman at a shelter in 2024.
KSL reportsLaura Darlene Northrup killed one of her two roommates while she was staying at the Medically Vulnerable People Program Facility in Sandy, Utah. Stephanie Lynn Haskett-Carrasco, also 62, was found dead under her bed on May 26, 2024. She had suffered blunt force trauma to her face and neck.
According to the Salt Lake Tribune, Northrup killed the victim by beating her with a metal can of Ensure nutrition powder, which was found with blood and hair on it in a bag under Northrup’s bed.
The facility reportedly served veterans, seniors, and people with medical conditions who were experiencing homelessness, per KSL. Staff at the facility said Northrup and the victim argued frequently.
According to KSL, Northrup pleaded guilty with a mental condition to murder on July 22. She received credit for time served and was sentenced to 15 years to life in prison on Oct. 29. As part of her plea deal, Northrup’s second-degree obstruction of justice charge was dismissed.
Haskett-Carrasco’s obituarydescribes her as a loving grandmother. “She loved to dance, sing, play, and joke with her grandchildren, creating memories that will be cherished forever. Her playful spirit and loving nature made her the best grandmother anyone could ask for. … Stephanie’s impact on her family, friends, and community will be felt for years to come. Her legacy of love, compassion, and joy will continue to inspire and uplift all who were fortunate enough to know her.”
