Shaun Layton, who co-founded the beloved Vancouver staple with Frankie Harrington in 2018, says this new concept is inspired by the duo’s annual travels to Spain, this time, along the windswept northern coast.

“We’re told to expect a menu centred around live-fire seafood traditions of the region. Layton says they plan to showcase the bounty of the sea in its most simple — and delicious — forms.

“There will be a definite focus on the cuisine of Northern Spain, such as the seaside towns of the Basque Country, Cantabria, and Galicia, but also the old-school seafood bars of Madrid, the modern, playful seafood restaurants of Barcelona, and the tabernas of Cádiz,” Layton explains.

Slated to launch this winter, the new destination will be located at 592 East Broadway, just a 12 minute walk from its predecessor, which became a fast favourite for serving conservas, tapas and sherry on tap long before tinned fish became the internet’s obsession.

The 2,500 sq. ft. space is situated inside a building rich in history. The property is currently called Faber Block, but it was formerly known as The Carolina and originally constructed in 1926. Previous tenants over the last 100 years include Black & White Grocery and Seb’s Cafe, to name just a few.

Daniel Kim joins Layton and Harrington as chef-partner at ¿CóMO? Ultramar. Kim put in a decade at Boulevard and has 15 years of experience in Vancouver’s fine dining scene. The front-of-house operations will be led by general manager Sean Grady, who currently holds that same position at ¿CóMO? Taperia.

The team has tasked Ste. Marie with the design and Glasfurd & Walker with the branding, while Harmony Pacific will tackle the construction required to bring the dining room and the space’s second-level mezzanine to life.
