After almost 20 years, the restaurant will pass to Yianni and Petro Kerasiotis, who, under the hospitality group Gaia House, operate a variety of Vancouver restaurants including Nammos Estiatorio, Selene Aegean Bistro, and Japanese-style speakeasy AMA.

The Kerasiotis’s ‘if it ain’t broke, don’t fix it’ approach will undoubtedly be a great relief to the many fans of the Fraserhood institution.

“Les Faux Bourgeois has always held a strong identity and our role is not to reinvent it, but to steward its legacy while still bringing something fresh and new to the table,” says Yianni.

Noting the establishment’s old and new owners became close over the years, Seppelt thought of the duo after deciding he was ready to sell the restaurant at 663 E 15th Ave.

“He approached me, told me they planned on selling and we looked at the numbers,” says Yianni. “We’ll keep its roots but we’ll bring in more seasonal and local ingredients. French is one of the classic cuisines and I’ve always been a fan.”

His favourite dish at Les Faux, he says, is always steak frites.

The kitchen team will be led by co-chefs David Cassese (Sat Bains, Joe Beef, Alo) and Brent Thornton (Elem, Good Thief, Is That French), who both cooked together at St. Lawrence.

Upcoming dishes include escargot en cocotte, and steak frites with Heston (Blumenthal) fries and duck bordelaise. A new raw bar will add oysters, prawns, dungeness crab, and mussels escabeche to the table.

Gaia House beverage director Dylan Riches will unveil a new cocktail program with bistro-inspired creations like elderflower pastis, truffle martinis, and bourguignon highballs.

The dining room will remain largely unchanged while the kitchen is set to get a refresh. The interior of the restaurant will “get a bit of an uplift,” so the restaurant will be closed for about a week this spring. For updates on the closure dates, visit @lesfauxbourgeois on Instagram.
