One of Canada’s buzziest salad businesses, Mandy’s Gourmet Salads, is coming to Vancouver.

Founded in Montreal in 2004 by sisters Mandy and Rebecca Wolfe, it quickly found fans among salad lovers who know that a big bowl of greens and assorted mix-ins can make for a memorable meal.

Since opening, the business has expanded to nine locations in its hometown city, as well as four locations and three ghost kitchens in Toronto, also expanding their menu beyond just salads to include salad dressings, smoothies, bowls and more.

The company is planning to open two locations in Vancouver this year: a takeaway and patio outpost at 2202 West 4th Ave in Kits; as well as a flagship restaurant at 1067 W Cordova St. In Coal Harbour.

“Vancouver’s salad culture, the whole relationship this city has with food and wellness, felt so aligned with everything Mandy’s stands for — in many ways, it’s always felt like a Mandy’s city to us, even before we started thinking about expansion,” said co-founder Mandy Wolfe in “a news release.

Before they open either location — the grand opening dates are still TBD — the Mandy’s team has launched delivery in downtown Vancouver.

“Delivery is our way of saying we hear you,” said Wolfe. “We want to give locals a first taste before we open our doors in Kitsilano this summer.”

Available through Uber Eats, the delivery radius is centred around Uber Eats starting today 988 Expo Blvd. And expands to approximately 8 km around that destination.
