LONDON (Vogue) — The sourdough starter of 2020 has evolved. The latest lifestyle obsession is “Countertop Homesteading,” a movement focused on ultra-local food preservation and production right in your kitchen.
From countertop hydroponic herb gardens to elaborate fermentation stations for homemade miso and kefir, urban dwellers are finding ways to be self-sufficient in small spaces.
“It’s about connecting with what you eat,” says food writer Alice Waters. “People want to know exactly what is in their food, and the best way to do that is to grow or preserve it yourself.” Sales of home fermentation kits are up 300% since January 1st.
